Okro Soup along with could be great start for lunch and dinner if you crave for African food
OKRO SOUP From Nigeria(Courtesy of africanbites.com)
Ingredients
• 1 pounded okra fresh or frozen
• ½ pounded oxtail meat
• ½ pounded shrimp
• ½ cup medium-sized onions chopped
• ½ cup ground crayfish
• 1 Tbsp Beef or Chicken Bouillon
• 3 Cups chopped Spinach
• 1 Tbsp Smoked Paprika
• ½ Cup Ground Red Pepper Flakes
• ½ Cup Ground Egusi (Optional)
• Salt and Pepper
Instructions
• In a medium-sized sauce pan, boil oxtail seasoned with garlic salt,smoked paprika,pepper and onions till tender for 30 minutes
• If using fresh okra wash the it and remove the tops and tails. Slice into rounds
• Blend the okra to a coarse consistency in a food processor or you can finely chop the okra into coarse consistency using sharp knife
• Add ground crayfish,bouillon or Maggie and Egusi into a pan of boiled meat, cook for 5 minutes
• Add Shrimp, cook for another 5 minutes and finally add spinach, stir for about mintute
• Serve warm with Fufu or any kind of Carb related food stuff
