Injera; a sour flat bread from Ethiopia and Eritrea ( Courtesy of thespruceeats.com)


Ingredients

• 2 Cups teff flour

• 2 Cups all-purpose flour

• ½ teaspoon table salt

• 5 Cups lukewarm water

• Cooking spray, for the skillet


Instructions

• Gather the ingredients

• Mix in a large bowl, stir or whisk the teff flour, all-purpose flour and salt until well combined

• Add water, while continuing stirring or whisking till combined

• Cover loosely with paper towel or clean kitchen towel. Let stand, undisturbed overnight

• Gently agitate the mixture with a wooden spoon in the morning. The bubbles must forming on the surface and the fermented water must rise to the top

• Cover again and let stand at room temperature, undisturbed and overnight. Repeat the process of agitating the mixture the following morning and then one more round of overnight resting

• After three to five days, your injera should smell sour and be bubbly, especially when the bowl is agitated, which means it is ready. Stir the mixture until combined

• Heat a large, non-stick skillet over medium-high heat. Spray lightly with cooking spray. Add about 1/3 cup of butter to the skillet, swirl it around to the edges of the pan to form a thin layer. Cook until bubbles form on the surface, the flat bread begins to look dry, and the edges pull away slightly from the pan. Cover the pan and continue to cook until the flat bread’s surface is dry, about 2 minutes. All in all, it will take about 5 minutes total per bread to cook.

• Use a spatula, remove the jerkin and transfer to a plate

• Repeat until all of the batter is used, spraying the pan with cooking spray as necessary

• Roll up the injera and serve with lentils, vegetables or meat



Labadja From Mali


Ingredients


• Any Kilo grams of Beef Fillet

• ½ Butter

• 2 Big Onions Chopped

• 2 Big Garlic Chopped

• 1 Big Green Pepper Chopped

• 2 Tbsp of spices of your choice

• A Pinch of Salt

• 1 Cup Rice

Instructions


• Pound the beef fillet till tender for 30 minutes

• Add butter on medium/large pot on a medium heat

• Add the pounded beef on the pot along with onions,garlic and green pepper at the same time

• Stir for 10 minutes

• Add 2 cups of water mixed in with spices and salt

• Pour in the mixture

• Add grains of rice

• Stir and Cook until the water has been absorbed for 2 hours
